Pájaro is an agave spirits project born from the desire to honor and pay tribute to the deep knowledge and labor behind mezcal production through traditional methods—without shortcuts. With respect for the time each process requires—from the slow maturation of the plant to natural fermentation and every step in between— our mission is to create a tangible, positive impact on producer communities through environmental conservation and connections with conscious consumers.

Producing mezcal sustainably

reducing our environmental footprint through reforestation and repopulation of agave varieties to avoid extinction, promoting crop diversification to nourish the land and protect biodiversity, efficient waste management and water and wood usage, and respecting the optimal maturity of agave plants (with no use of growth accelerators).

Building fair and long-term economic relationships

with our producers, ensuring an equitable distribution of benefits. Our model goes beyond paying a fair price: we get involved in improving the palenques and the livelihoods of the mezcaleros we work with, challenging the prevailing extractive models in the spirits industry.

Agustín Güendulain Maya & Family

San Luis Amatlán / Oaxaca

Agustín Güendulain Maya is a fifth-generation maestro mezcalero from Miahuatlán de Porfirio Díaz, Oaxaca. His palenque is located in San Luis Amatlán, a region exceptionally well-suited for mezcal production thanks to its climate, wealth of micro-endemic agave species, and mineral-rich spring that significantly shapes the flavor profile of the region’s spirits.

Born and raised among agaves, Agustín's expertise has been passed down orally across generations and he learned to work agave with patience and care. His handcrafted spirits embody this history. They reflect his deep love for the land and the maguey plants he transforms with dedication, precision, and respect—without haste and without shortcuts, as true mezcal demands.

With our partnership, Maestro Agustín will see a 300% increase in sales and receive investments in upgrading his palenque, contributing to better working and living conditions. 

Santiago Family

San Dionisio Ocotepec / Oaxaca

Mezcal production is a family affair for the Santiagos, based in San Dionisio Ocotepec, Oaxaca. Master distiller Pablo Santiago, his wife, and children are all involved in the business. Thanks to their hard work, the Santiagos have not only managed to produce high-quality mezcal, but also to become a model in terms of sustainability: they have a water collection capacity of 100,000 liters, use biodigesters to process waste, and have ways of working with their community that guarantee benefits for everyone, among other things. It is a pleasure to share their mezcal and to collaborate and learn from them.

Pájaro offers a curated selection of agaves, each selected for their quality, sustainability, and production viability. A rigorous quality control system is implemented throughout every stage of production—from harvest to bottling—to ensure the integrity of the final spirit.

Produced by experienced maestros mezcaleros in Oaxaca, Pájaro features two distinct product lines to meet the needs of diverse market segments:

Mezcal for Cocktail Programs

- Ethically crafted under sustainable practices with a strict focus on biodiversity and recycling.

- Designed as an accessible product, with a strategy focused on volume and profitability.

Single Agave Spirits

- A meticulous selection of agave spirits using only endemic agave varieties, reflecting the historical taste of each producing region.

- High added value due to artisanal and traditional methods: no pesticides or growth accelerators and agave harvested only at peak maturity, cooked in underground pit ovens, crushed with tahona, fermented naturally, and distilled in copper stills in small batches.

This dual focus allows us to reach a wide range of venues from high-end retail to cocktail bars.
